With the exception of Monday, I have to work until 6 pm each night this week, so I had to plan several quick meals.
Monday: Roast Chicken with Cilantro & veggies, homemade bread
Process 2 cup cilantro, 1/4 cup wanuts, 3 tbsp. lemon juice, 1 tbsp. olive oil, 2 cloves garlic, 1 tsp each of paprika, curry powder, cumin, & salt. Rub over chicken (breast or pieces). Cut 2 potatoes 1 red pepper, and 1 green or yellow pepper into 1″ pieces. Place all in 9×13 dish. Spray with cooking spray and sprinkle with salt & pepper. Bake at 375 for 1 hour. If using breasts only, drizzle olive oil and cover with foil for the first 45 minutes.
Tuesday: Brown Bag Burritos, chips & salsa
I made these Brown Bag Burritos a few weeks ago. Matt has taken them to work but I haven’ t had a chance to try them yet!
Wednesday: eat at church
Thursday: Sticky Asian Barbecue Grilled Chicken, rice, steamed broccoli, homemade rolls
Combine 1/2 cup sweet & sour sauce, 1/4 cup hoisin sauce, 2 tbsp. soy sauce, 2 tsp. grated ginger, & 1 tsp minced garlic. Marinate chicken breasts 30 minutes to overnight. Discard marinade and grill chicken.
Friday: Potato Soup and Hoagies
Saturday: Baked Ham, homemade mashed potatoes, green beans unbundled, homemade rolls
I had this on the schedule a couple of weeks ago, but I forgot to defrost them ham! We’ll try again!
Looks good!!! I just got mine done for the week too, and got everything prepared and in the freezer for next weeks meals! I don’t want to be hanging out in the kitchen the whole time Josh is here, but I want to give him some good homecooked meals 🙂 I was surprised how quick and easy it was to get 5 meals done in one day!
