If you love salsa and you love peaches, then you’ll love this recipe! I came across it last year when I bought some peaches from a local farmer and they were ripening quicker than I could eat them. It’s the perfect balance of sweet and tangy. Perfect for a hot summer day!
Start with 4 peaches (I used 8 because I doubled the recipe). Peel and dice them.
Then add the rest of the ingredients. It’s that easy! Enjoy!
Recipe: Peach Salsa
4 small peaches, peeled and diced
Juice of 2 limes, about 1/4 cup juice
2 tsp. honey
3-4 tbsp. diced red bell pepper
1 tbsp. finely minced jalapeno pepper
1 tbsp. chopped cilantro
1 clove garlic, finely minced
2 tbsp. finely chopped red onion
Combine all ingredients. Refrigerate until serving time, at least 4 hours.
