I’m cooking this next week because it’s the perfect summer grill night meal. And because my bell peppers are starting to ripen in my garden! 🙂 I have been cooking this since Matt and I had our first house (and our first grill), which was about 10 years ago. It’s easy, it’s quick, it’s tasty, and it’s healthy!
1 lb. chicken breasts
1/4 cup soy sauce
2 tbsp. lemon juice
2 cloves garlic, minced
1/8 tsp. ground mustard
1/8 tsp. ground ginger
1 medium red or green bell pepper, cut into 1″ pieces (I prefer red because of the taste)
1 medium onion, cut into 1″ pieces
1 cup fresh pineapple chunks OR 1 small can pineapple slices
The night or morning before: Rinse chicken. Pat dry with paper towels. Cut in 1″ pieces and place in plastic bag. In bowl, combine soy sauce, lemon juice, garlic, ginger, & mustard. Pour over chicken. Marinate until ready to grill (6 to 24 hours).
Drain chicken. Thread chicken, pepper, onion, & pinapple (the slices to be cut in half if you use those) on skewers.
Grill until cooked through.
This is delicious with homemade fried rice!
