This week is Vacation Bible School at our church, so the kids and I will be eating there most days. But I didn’t leave Matt without food. I’ve stocked some freezer meals for him (thanks to Money Saving Mom’s 4 Weeks to Fill Your Freezer). I’m sure he’ll ditch my plans a night or two but at least he won’t have to eat fast food all week!
Monday: Southwest Roll-ups
Tuesday: Ham Omelet
No, this wasn’t a freezer meal, but since Matt likes to make omelets and I got eggs for $1 per dozen a couple of weeks ago, I figured this would be a good “suggestion” for him.
Wednesday: Pizza pockets
Thursday: Brown Bag Burritos

Friday: Spaghetti
This is Drew’s favorite meal, and it’s also easy. After 5 straight nights at VBS (after working all day), I wanted to do something simple.
Saturday: Cream Cheese Chicken Enchiladas
I thought this meal on Faithful Provisions looked delicious, so I’m going to try it on Saturday, when I have more time to cook.
