With summer here, we inevitably turn to grilling more often. I also don’t want to spend all evening cooking, so having a quick go-to grilling recipe gives me more time for my family in the evenings.
I found this marinade in a magazine a while back, and we really like the rich, tangy flavor.
1/4 cup olive oil
2 tsp. grated lime zest
1/4 cup lime juice
1 tbsp. minced garlic
1 tsp. salt
1/2 tsp. black pepper
4 skinless, boneless chicken breasts
Combine all ingredients except chicken the night before you plan to eat. Place chicken in zip-top bag and pour marinade over the chicken. The next day, grill the chicken breasts, turning once, until the chicken is cooked through.
