This was a very simple meal plan week for me. I tried to utilize what I had already bought on sale for most of the dinners.
Monday: Sloppy Joes with chips
I got sloppy joe sauce on sale recently for about $0.70 per can. Along with ground beef and a 12-pack of Wonder Bread Sandwich Buns at the Wonder Bread Store for $1.00, this meal ended up costing only $3.80 plus the chips. I’m not a big fan of sloppy joes but Matt likes them so I make them on occasion.
Tuesday: Fajitas
Chicken breasts were on sale for $1.88 per pound at Kroger, and I marinated them in taco seasoning mix (with vegetable oil & water) I got on sale for $0.50 a few weeks ago. I’ll add peppers, onions, shredded cheese I got on sale for $1.50, sour cream, & salsa.
Wednesday: We eat at church.
Thursday: Spaghetti
Spaghetti is Drew’s favorite. I’m eating out with coworkers that night so I wanted to plan something easy for Matt to make for the kids. I precooked the ground beef for both the spaghetti and the sloppy joes over the weekend to make it easier during the week.
Friday: Grilled Steak & Potatoes
Matt is going to buy steak from our local meat market. I’m going to try a loaded slow-cooker potato recipe I found on 5dollardinners.com. I’m also hoping we’ll have a fresh batch of squash in our garden.
Saturday: Baked Ham
I got ham on sale around Easter so I’m going to cook it along with green beans unbundled for a hearty Saturday meal. With the leftover ham, I’ll make ham salad sandwiches, a recipe my mother-in-law shared with me that Matt and Alyssa will have for several lunches.
Sunday: Our after-church lunch is usually pretty simple (leftovers or hot dogs), and we treat ourselves after church in the evenings to an evening out. Drew, Matt, and I “take turns” choosing the restaurant.
