Last week I made sandwiches for lunch, and I wanted to do something healthier and more filling than plain ‘ol chips. So I looked at what I had on hand – strawberries and a banana. I went online and got some ideas, and this Strawberry-Banana Fruit Salad is what I came up with. If I had blueberries on hand, I would have added those.
3/4 cup strawberries, cut up
1 banana, sliced
1 tbsp. lemon juice
1 tsp. – 1 tbsp. honey
1 tsp. poppy seeds (opt.)
Place sliced bananas in bowl. Add lemon juice and stir. Drain lemon juice. Add strawberries. (If they are in syrup from being preserved or frozen, use as much of the syrup as you like.) Add honey and poppyseeds (use less honey if you have plenty of strawberry syrup).

Strawberries and bananas are both high in fiber and vitamin C. Strawberries contain antioxidants, and bananas are high in potassium and manganese. Poppy seeds are also high in fiber (2 g per tbsp) and calcium (13% RDA per tablespoon).
